I've been a big chili fan for as long as I can remember. I was nervous about switching to Turkey chili when my trainer suggested the healthier change. Ground beef was just what I was used to, but here's the thing. I actually prefer Turkey now! No interest in beef anymore. Hopefully you'll feel the same when you try my recipe. Here's what you'll need: 1 pound lean ground turkey
Box of chopped Pomi tomatoes
Can of black beans
1 chopped onion
3 cloves garlic
1 green pepper
1 tablespoon chili powder
1 tsp stevia brown sugar
1 tsp siracha
Salt & pepper to taste
Red pepper flakes
Light sour cream
Shredded Mexican blend cheese
First chop the onion, green pepper and garlic cloves in a food processor. Then brown your ground turkey in a skillet. Once browned, add in the food processed vegetables.
Next pour the Pomi chopped tomatoes into a crock pot. Add the strained black beans, ground turkey, onion and pepper altogether and stir. Next add in your spices. Top of with siracha. I say "to taste" with most of your spices because every pallette is different! I can't go too spicy, so you might want more chili powder and siracha than I do. That's ok, go for it!
Serve hot with a dollop of light sour cream, sprinkle with cheese and fresh parsley (if you'd like). It's fine to eat plain too!
This is one of my favorite healthy meals, because you literally toss everything in the pot and go about your day. There's nothing better than that! And it allows you to suit your own taste buds. It's kind of hard to mess up chili. You can add and subtract ingredients, just taste it. Make sure you like your flavors you have going before you let it cook.
The hardest thing about this is, not everyone carries the Pomi brand of tomatoes. Bummer, because being boxed and not canned means they are the only BPA free tomatoes! So of course it will work without Pomi but I prefer the Pomi! I know that Publix, Whole Foods and Albertsons usually have these tomatoes and you find them in the canned tomatoes aisle. You can order them online if no one near you carries them!
